Broccoli Cheddar Soup

Time to Prepare: 15 minutes Cook Time: 35 minutes Serving: 6 People


Ingredients

1 small onion, chopped 3 tablespoons olive oil 3 cups broccoli, (½ lb. broccoli),

chopped into bite size pieces 1 cup carrot, julienned 2 cups chicken broth 2 cups half and half cream 2 cups (8 oz) grated cheddar cheese ¼ teaspoon nutmeg, (optional) salt & pepper, to taste Cooking Method

  1. In a pot, over medium heat, sauté onion in olive oil until soft.

  2. Whisk in the half and half and chicken broth.

  3. Add the broccoli and carrots. Cook over low heat for 20-25 minutes or until the broccoli and carrots are tender. Add salt and pepper.

  4. You can leave the soup chunky or you can blend one cup of soup and stir it back in for a smoother consistency.

  5. Reduce heat to a simmer and add the cheese. If your heat is too high the soup can get grainy. Stir in the nutmeg if desired.

  6. Serve with crusty bread or grilled cheese sandwich with cheddar cheese.

HELPFUL TIPS

You can buy matchstick carrots in your supermarket produce section.
