Spinach Stuffed Shell Lasagna

Time to Prepare: 50 minutes Cook Time: 40 minutes Serving: 6 People


Ingredients

28 oz jar of Marinara Sauce 14 oz can diced or crushed tomatoes 1.2 lb ground beef ½ onion, chopped 3 cloves garlic, minced 2 tablespoons olive oil 10 oz package frozen chopped spinach, thawed and squeezed well 15 oz part skim ricotta cheese ½ cup grated Parmesan cheese 1 large egg salt and pepper, 2 cups shredded mozzarella cheese

Cooking Method

  1. Preheat your oven to 350 degrees F.

  2. Cook shells according to package directions, then drain.

  3. Combine spinach, ricotta, Parmesan, egg, ½ teaspoon salt and black pepper in a medium bowl. Set aside.

  4. Sauté onion and garlic in olive oil on medium high heat, until soft, about 5 minutes.

  5. Add ground beef and break it up while it cooks until cooked through. Then drain any excess fat.

  6. Add tomatoes and marinara sauce and simmer for 20-25 minutes.

  7. Ladle about 1 cup sauce from ground beef mixture on the bottom of a 9 x 12 baking dish.

  8. Place a piece of wax paper on the counter and layout shells. Fill shells with a heaping tablespoon of spinach mixture and transfer seam side down in baking dish.

  9. Ladle remaining sauce (ground beef mixture) over the shells and top with mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts.

HELPFUL TIPS

You can find pre-minced garlic at the supermarket. About 1 teaspoon is equivalent to 1 clove.
