Spinach Manicotti

Time to Prepare: 30 minutes Cook Time: 45 minutes Serving: 6 People

Ingredients


 
2 cups homemade marinara sauce, plus more for serving
 
1 box manicotti shells (about 10 shells)
 
10 oz package frozen chopped spinach, thawed and squeezed well
 
15 oz part skim ricotta cheese
 
½ cup grated parmesan cheese
 
1 large egg
 
9 tablespoons (3 oz) part skim mozzarella cheese
 
salt and pepper
 


 
Cooking Method

  1. Preheat your oven to 350 degrees F.

  2. Cook manicotti shells according to package directions, then drain.

  3. In a medium bowl, combine spinach, ricotta, parmesan, egg, ½ teaspoon salt and black pepper.

  4. Ladle one cup sauce on the bottom of a 9x12 baking dish.

  5. Using a small teaspoon (or your fingers), carefully fill each shell with mixture and place into the baking dish.

  6. Ladle remaining sauce over each filled manicotti and top with a tablespoon mozzarella cheese.

  7. Cover the baking dish with foil and bake for 40-50 minutes, or until the cheese melts.
