Ingredients
2 cups homemade marinara sauce, plus more for serving
1 box manicotti shells (about 10 shells)
10 oz package frozen chopped spinach, thawed and squeezed well
15 oz part skim ricotta cheese
½ cup grated parmesan cheese
1 large egg
9 tablespoons (3 oz) part skim mozzarella cheese
salt and pepper
Cooking Method
Preheat your oven to 350 degrees F.
Cook manicotti shells according to package directions, then drain.
In a medium bowl, combine spinach, ricotta, parmesan, egg, ½ teaspoon salt and black pepper.
Ladle one cup sauce on the bottom of a 9x12 baking dish.
Using a small teaspoon (or your fingers), carefully fill each shell with mixture and place into the baking dish.
Ladle remaining sauce over each filled manicotti and top with a tablespoon mozzarella cheese.
Cover the baking dish with foil and bake for 40-50 minutes, or until the cheese melts.
