Ingredients
5 small baked potatoes
2 tablespoons olive oil
½ teaspoon parsley, chopped
¼ teaspoon garlic powder
1 cup cheddar cheese
salt & pepper
bacon bits
chives for topping (optional)
Serve with sour cream
Cooking Method
Preheat your oven to 400 degrees F.
Wash (brush) potatoes well and pierce all around with a fork. Bake for 50 minutes. Let cool.
While potatoes are cooling, in a small bowl, combine olive oil, garlic powder, salt, and pepper.
Cut potatoes in half lengthwise. Using a small spoon, scoop out the flesh leaving a ¼” shell, or more if you prefer.
Brush the inside and outside of the potatoes with the olive oil mixture. Place potatoes cut side down on a baking sheet and bake for 10 minutes. Flip potatoes over and bake an additional five minutes or until browned and crisp.
Fill each potato with cheese and bacon bits. Return to the oven for another 5-7 minutes until the cheese is melted and bubbly.
Remove from the oven, top with parsley and chives and serve with sour cream.
