Sausage & Ricotta Mini Calzones

Ingredients

Filling: 1 pound sweet Italian sausage, casing removed 1 tablespoon olive oil 1 medium onion, chopped 2 cloves garlic, chopped 15-ounce container whole milk ricotta cheese 8 ounces mozzarella cheese ½ cup grated parmesan cheese 2 eggs ½ teaspoon Italian seasoning a handful flat leaf parsley, chopped ¼ teaspoon red pepper flakes ½ teaspoon salt olive oil for brushing on top of calzones Dough: Two 10 ounce tubes prepared pizza doughs (I use pre-cut frozen pizza dough rounds) Cooking Method

  1. In a small skillet add olive oil, onion and garlic and saute for 1-2 minutes. Add sausage and cook over medium heat, breaking up until cooked through. Remove from the skillet and drain excess fat.

  2. In a mixing bowl, combine ricotta, eggs, mozzarella, parmesan, italian seasoning, parsley, salt and red pepper flakes. Add sausage and mix to combine all ingredients.

  3. Preheat the oven to 375 degrees F.

  4. If you are not using the precut rounds, roll out the prepared pizza dough with a rolling pin. Use a circular cookie cutter or a water glass to cut out circles.

  5. Form the calzones by dividing the filling between each of the rounds of dough. Fold the top half of the dough over, leaving a ½ inch border uncovered. Lightly press the dough to seal it. Starting at one end, place your index finger diagonally across the edge and pull the bottom layer of the dough over the tip of your finger and repeat.

  6. Brush each calzone with olive oil. Bake until they are golden brown, about 15 - 20 minutes.

  7. Serve with warm marinara sauce.

HELPFUL TIPS

You can make your own pizza dough and you can make the calzones bigger if you wish.
