Sweet Potato Quinoa & Black Bean Bake

Time to Prepare: 5 minutes Cook Time: 50 minutes Serving: 6 People


Ingredients

4 cups sweet potato (½ to 1 inch cubes) 1 cup uncooked quinoa, rinsed 1 cup frozen corn, thawed 1 15 oz black beans, drained and rinsed 3 cups vegetable broth 2 tablespoons olive oil 1 teaspoon cumin 1 teaspoon chili powder 1 teaspoon garlic powder ½ teaspoon salt ½ teaspoon dried thyme ½ teaspoon green onion Cooking Method

  1. Preheat your oven to 375 degrees F.

  2. Combine all ingredients, except green onions in a 9x13 baking dish, sprayed with cooking spray. Cover with aluminum foil and bake for 40 minutes.

  3. Remove foil and continue to cook for 10 minutes until sweet potatoes are tender.

  4. Remove from the oven and let sit for five minutes.

  5. Sprinkle with green onion. Serve and enjoy!


HELPFUL TIPS

You may adjust the seasoning to your liking. If it looks like there is still some liquid in the casserole after you remove it from the oven, it's okay. It will be absorbed after sitting a few minutes, before serving.
