Ingredients
2 cups water
¾ cup rice, arborio (or Carolina short grain rice)
½ cup pure cane sugar
pinch of salt
5 cups whole milk
Cinnamon for serving
Cooking Method
In a medium saucepan, bring two cups of water to a boil. Then stir in rice and a pinch of salt. Cook over medium heat until the water is absorbed; about 8-10 minutes.
Add milk and sugar, stir and bring to a gentle boil. Once it begins to boil, reduce heat to a low simmer.
Stirring occasionally, cook for 30-40 minutes. Mixture should thicken up to the consistency of yogurt.
Turn off the heat and let stand for 15 minutes, but stir every five minutes to avoid film on top.
Ladle rice pudding in serving bowls and sprinkle with cinnamon. Let cool, refrigerate and enjoy!

There are many different versions of rice pudding. It is an easy and creamy dessert that is served warm, room temperature or cold, and can be enjoyed all year round. You may top with raisins or your favorite fresh or dried fruit.
