2 cups water ¾ cup rice, arborio (or Carolina short grain rice) ½ cup pure cane sugar pinch of salt 5 cups whole milk Cinnamon for serving
In a medium saucepan, bring two cups of water to a boil. Then stir in rice and a pinch of salt. Cook over medium heat until the water is absorbed; about 8-10 minutes.
Add milk and sugar, stir and bring to a gentle boil. Once it begins to boil, reduce heat to a low simmer.
Stirring occasionally, cook for 30-40 minutes. Mixture should thicken up to the consistency of yogurt.
Turn off the heat and let stand for 15 minutes, but stir every five minutes to avoid film on top.
