Time to Prepare: 15 minutes Cook Time: 40 minutes Serving: 4 People
Ingredients
1 12 oz bag, frozen artichoke hearts
1 cup frozen peas
⅛ cup olive oil
1 medium onion, chopped
2 whole scallions, finely chopped
2 large potatoes, peeled and cut into wedges
¾ cup sliced carrots
½ cup chopped dill
juice from 1 lemon
salt and pepper to taste
2 cups hot water
1 tablespoons cornstarch ( optional)
Cooking Method
In a saucepan, over medium heat, add olive oil and saute onions for 3 minutes or until translucent.
Add potatoes, artichokes, carrots, salt and pepper and saute a little more. Add hot water, bring to a boil, lower heat and simmer for 20 minutes. Add frozen peas, lemon juice and dill. Cook for 10 more minutes until not much liquid remains.
By the end of cooking time, there isn't excess liquid in my pot. Therefore, I do not use cornstarch. If you would like your sauce to be thicker, place two tablespoons of cornstarch in a bowl and add dissolve with a little broth from the food. Stir and pour over food.
Serve with crusted bread and enjoy.
