Beef Tomato Soup with Pastina

Time to Prepare: 10 minutes Cook Time: 90 minutes Serving: 4-6 People


Ingredients

1 pound lean ground beef ½ cup diced onion 1 teaspoon salt ½ cup diced carrot ½ cut diced celery 28 ounce can diced tomatoes 28 ounces water 32 ounces beef stock 3 bay leaves 5 ounces pastina Grated parmesan cheese, optional Cooking Method


  1. In a large pot, over medium heat, sauté the beef until browned, breaking the meat up into small bits. Add the onion, carrot, celery and salt and sauté for 3 -4 minutes.

  2. Add the tomatoes, beef stock and bay leaves, cover and cook on low heat until the beef and the vegetables are tender for about one hour. You may need to add the water intermittently as the liquid evaporates.

  3. Add the pasta, stir and cook it for the time indicated on the package.

  4. Top with parmesan cheese.

HELPFUL TIPS

You can add chopped garlic if you like. You can substitute ground turkey in place of the ground beef. You can substitute the pastina with other small pasta such as acini de pepe.
