Time to Prepare: 5 minutes Cook Time: 20 minutes Serving: 6 People
2 packages boneless chicken thighs (about 8 thighs) Two 6 oz. jars of marinated artichoke hearts 2 teaspoons oregano 2 cloves garlic, minced salt and pepper, to taste For topping: ½ cup feta cheese 4 tablespoons fresh chopped parsley lemon juice, optional
Wash and dry chicken thighs. Trim off any fat.
In a bowl, combine chicken with artichoke hearts, including the liquid marinade inside the jars. Let marinade for 20-30 minutes. Then drain all liquid.
Add garlic, oregano, salt and pepper. Toss until the thighs are evenly coated.
Broil about 6 inches from the flame or about 10 minutes or until golden brown. Then turn chicken and cook for another 5 minutes or until cooked through. Be careful not to burn.
Top chicken with feta and broil an additional minute.
Remove from the oven, top with fresh parsley and lemon juice, if desired!
Keep an eye on the oven as it can burn easily. You can eat the feta cold as well.
