Time to Prepare: 10 minutes Cook Time: 15 minutes Serving: 1 People
4 egg whites or ¾ cup liquid egg whites
1 slice of cheddar cheese or 1-2 oz of
shredded cheddar cheese
½ cup spinach
salt and pepper to taste
sprinkle garlic powder
sprinkle onion powder
Spray a medium size non-stick pan with cooking spray and heat over medium-high heat.
Place one tortilla in the pan and heat on one side. When the tortilla is hot, flip and add half of the cheese. Remove tortilla onto a plate.
In the same pan over medium heat, add ½ cup fresh spinach. Saute the spinach until wilted.
Add salt, pepper, garlic powder and onion powder to the egg whites and whisk.
Once the spinach is wilted, pour the egg whites over the spinach. Do not stir eggs. Once they are almost set, flip them or fold one side over the other and continue cooking until fully set. Add ½ the cheese on top and let melt. Place on top of the tortilla and fold.
Serve with guacamole and salsa. Enjoy!
Note for Gluten Free Tortillas: Trader Joes has brown rice tortillas. To make the tortillas more pliable follow the directions on the bag.
