Roasted Brussel Sprouts with Beets and Goat Cheese

Time to Prepare: 20 minutes Cook Time: 30 minutes Serving: 6 People


1 pound brussel sprouts, trimmed and sliced in half, lengthwise ⅓ cup olive oil salt and pepper to taste 1 15 oz jar, cut beets in vinaigrette 3 oz goat cheese Cooking Method

  1. Preheat your oven to 400 degrees F.

  2. In a mixing bowl, drizzle the sliced brussel sprouts with olive oil, salt and pepper. Toss until well coated and place on a parchment lined baking sheet. Bake for 25-30 minutes turning half way through. Remove from the oven and let cool.

  3. Drain the beets in a colander and let sit for 5 minutes.

  4. Place brussel sprouts and beets in a serving bowl, drizzle with olive oil and top with goat cheese.

  5. Enjoy!


You can add chopped walnuts or pecans to this salad.
