1 pound brussel sprouts, trimmed and sliced in half, lengthwise ⅓ cup olive oil salt and pepper to taste 1 15 oz jar, cut beets in vinaigrette 3 oz goat cheese Cooking Method
Preheat your oven to 400 degrees F.
In a mixing bowl, drizzle the sliced brussel sprouts with olive oil, salt and pepper. Toss until well coated and place on a parchment lined baking sheet. Bake for 25-30 minutes turning half way through. Remove from the oven and let cool.
Drain the beets in a colander and let sit for 5 minutes.
Place brussel sprouts and beets in a serving bowl, drizzle with olive oil and top with goat cheese.
You can add chopped walnuts or pecans to this salad.
