1 lb. raw shrimp, peeled and deveined 6 slices cooked bacon (1 cup) chopped 2 hard boiled eggs, halved lengthwise ½ cup corn 12 oz. butter leaf lettuce 2 garlic cloves, minced 1 cup cherry tomatoes, halved ½ avocado sliced 2-4 oz crumbled blue cheese or gorgonzola Dressing: 2 tablespoons extra virgin olive oil salt and pepper to taste Cooking Method
To hard boil eggs: Place eggs in a saucepan with cold water and add a pinch of salt. Make sure the water is covering the eggs by 1 inch. Bring to a boil. Once boiling, let boil for 2 minutes. Then shut off fire, cover and let stand for 10 minutes. Drain and run under cold water. Let cool. Then peel and halve them, lengthwise.
In a skillet over medium heat, add 1 tablespoon of olive oil and minced garlic. Add shrimp and cook for two minutes on each side. Remove and chop each shrimp into thirds.
In a large salad bowl, combine lettuce greens, shrimp, cherry tomatoes, corn, bacon, avocado, hard boiled eggs and blue cheese. Toss to combine.
Add dressing just before serving.
You may substitute gorgonzola or blue cheese with goat cheese or alternative cheese.
