For salad: baby spinach strawberries red onion goat cheese, crumbled sunflower seeds sliced radish grilled chicken (seasoned with salt, pepper, oregano and garlic powder) Balsamic Vinaigrette Dressing: ¼ cup extra virgin olive oil 1 ½ tablespoon balsamic vinegar 1 tablespoon dijon mustard 1 teaspoon maple syrup or honey 1 garlic clove, minced (I like wellesley farms minced garlic) ground pepper to taste Cooking Method
Combine all of the salad ingredients in a large bowl.
In a separate smaller container, prepare vinaigrette by combining all ingredients and whisking until fully blended. Taste, and add more salt or pepper if needed.
Drizzle the dressing over the salad just before serving.
Goat cheese may be substituted with feta cheese.
